nice to see it on arduino! greyscale part of the video looks crappy though :(
some guys on other platforms been getting better results doing velocity differences per frame compression only (read about it on an how to article of one of the atari st versions i believe). you might want to try that to improve framerate. :)

Two resistors: 1K Ohm to pin 53, 470 Ohm to 52, connect both to the monitor's composite input (centre pin). And don't forget the ground too (connector's outside ring / shield).
